Thai “Sai Ua” Lettuce Wrap
Sai Ua is such a versatile and flavorful sausage we have used it as a centerpiece of soup and salad recipes and grilled it outside on skewers.

Heat oil in pan. Sauté ginger and garlic in medium pan until transparent. Add crumbled Sai Ua Sausage to pan. Sauté until cooked. Set aside.
Cook 2 cups white rice.
Arrange lettuce leaves on platter. Spoon rice, Sai Ua Sausage on the leaves. Garnish with chopped scallions, peanuts, red pepper, and cucumber. Lightly dress with lime juice and serve with additional lime slices.
