 4 whole English muffins, split and toasted
 8 North Country Charcuterie Breakfast Sausage Patties
 8 large eggs
 1 recipe of Hollandaise sauce
 chopped parsley for garnish
 salt and pepper, to taste

In a skillet, cook the sausage patties until browned and cooked through.


Prepare the Hollandaise sauce and keep warm.
