North Country Charcuterie Hoguera Chili

Servings: Eight generous bowls of chili, less than one ounce of meat per person Our Hoguera Spreadable Chorizo is a fun, creative addition to your favorite chili recipe, or try our Hoguera Chili! Hoguera Spreadable Chorizo is made with hot paprika, chipotle and cayenne pepper, and our favorite ingredient, pork! There is very little meat in the Hoguera package, but it will add intriguing smokiness and residual heat to the chili. And wait until you see the last surprise ingredient!

Ingredients
  

  • 1 tbsp Cooking oil
  • 1 Large onion, chopped
  • 1 Red pepper, chopped
  • 1 Green pepper, chopped
  • 1 Orange pepper, chopped
  • 3 15 oz cans of diced tomatoes, juices included
  • 1 cup Corn
  • 2 tsp Ground cumin
  • 2 15 oz cans of black beans, drained and rinsed
  • 1.5 cup Chicken broth
  • 7 oz Hoguera Spreadable Chorizo
  • Salt and pepper to taste
  • .24 cup Semi-sweet chocolate chips

Instructions
 

  • Heat oil in Dutch Oven or large pot. Sauté onion and peppers until onions are translucent. Add tomatoes, corn and broth. Season with cumin, salt and pepper. Bring to boil, reduce heat and simmer for 20-30 minutes or until mixture begins to thicken.
  • Remove the Hoguera from its casing. Break up the chub of Hoguera with a fork. In a separate pan, sauté the Hoguera until it is darker brown. Add to the pot of vegetables. Stir well.
  • Let chili simmer for another 20 minutes. Add 1/4 cup chocolate chips! Let chips melt well, stir again to incorporate chocolate flavor. If you make this chili in advance, it will have time for the flavors to meld. Serve with corn bread and toppings like avocado; mild grated white cheese; cilantro or sour cream.
